I personally as a german have to say i love it if the "Bratwürste" Split open and get some crisp developed around the Splits. That little crunsh is wonderfull

Man. Imagine picking up a contract to build a fence, working all morning in the sun, then randomly out of nowhere Kenji comes rolling over with a tray of sausages. You definitely buy a lotto ticket and a 6 pack on the way home that day.

Wisconsinite here, you're overthinking brats. Get a good brat, Usingers, Sheboygan, even Klements, hell anything but Johnsonville. Low and slow on a grill, no need to simmer in beer. Add kraut and onions on the bun if you wish. Simmering seeps the flavors out of the brats into your liquid, which is then lost.

Kenji, I love your videos. I rarely comment on anything I watch, but I must say that going to all this trouble cooking merely 4 bratwurst, in a full pound of sauerkraut is grossly unbalanced. Cook 10, or at least 8 for Christ sakes. No one, with the decent sized awesome aluminum roasting pan is going to make 4. Make 8! Make the package. That package better include 8, and if not? Then buy 2 packs of 4 bratwurst each.

In Germany, we grill our bratwurst over low fire without cooking them first. It makes a better crust than your way. However, it is not so easy…

This is a very good method.

The Wisconsin method is fairly similar: boil brats in a bath of beer, onions and butter. Remove onions for garnish, sear on the grill, serve with onions and/or kraut.

Kenji. Loving this channel. For your intro, i would maybe have two cameras on at the same time. One hand selfie to speak into, and the other gopro on your head. Then align them in post. that way, it could further help with the potential motion fixation for the initial segue. Im diggin how you improve each week. like a pioneer…
